LUCY'S LEMON SQUARES | |
1 c. plus 2 tbsp. all-purpose flour 1 stick (1/2 c.) cold unsalted butter, cut into bits 1/4 c. confectioners' sugar and additional for sifting over the dessert 2 lg. eggs 3/4 c. granulated sugar 3 tbsp. fresh lemon juice 1/2 tsp. double acting baking powder In a bowl blend together 1 cup of the flour, the butter, and 1/4 cup of confectioners' sugar until mixture resembles meal. Pat mixture into an 8 inch square baking pan and bake in middle of 350 degree oven for 12-15 minutes or until golden. In another bowl, with electric mixer, beat eggs until they are thick and pale. Beat in the granulated sugar and lemon juice and beat for 8 minutes. Sift in the remaining 2 tablespoons flour and the baking powder. Stir until combined well and pour mixture over baked layer. Bake in the middle of 350 degree oven for 20 minutes until golden. Sift the additional confectioners' sugar on top. Cool and cut into squares. I usually double this recipe if I am going to all this work!! |
