CHICKEN - BROCCOLI CASSEROLE 
4 chicken breasts, simmered until tender
2 pkgs. frozen broccoli
1/2 c. slivered almonds
1/4 c. butter
2 tbsp. flour
2 egg yolks
Dash of cayenne pepper
Juice of 1/2 lemon
Grated cheese
2 c. cream (or combined cream and chicken stock)
Salt

Slice cooked chicken breasts as thin as possible. Cook frozen broccoli for 5 minutes in boiling salted water. Place broccoli in bottom of greased casserole. Sprinkle with almonds and overlap the slices of chicken on top. Make a sauce of butter, flour, and cream, stirring until smooth. Beat egg yolks and add lemon juice; stir into sauce; season with salt and pepper. Pour over chicken and broccoli in casserole. Sprinkle with grated cheese. Bake in oven set at 375 degrees for 20 minutes or until heated through. If made ahead of time, store in refrigerator and heat a little longer.
