ORIENTAL CHICKEN SALAD 
1/2 c sugar
1 T cornstarch
1/4 c water
1/4 c vegetable oil
1/4 c ketchup
3 T cider vinegar
1 T soy sauce
1 medium head iceberg, lettuce, torn
2 c cooked chicken, shredded or cubed
1 c salted cashews
1-8 oz can water chestnuts, drained
1-6 oz pkg frozen snow peas, thawed and drained
1-3 oz can chow mein noodles
1/4 c green onions, chopped

Combine the first 7 ingredients in a saucepan and bring to a boil. Cook for 2 minutes until thickened, stirring as needed. Cool mixture.

Combine lettuce, nuts, chicken, vegetables and green onions in a large salad bowl. Add dressing and toss to coat. Add chow mein noodles just before serving.

Serves 8.
