CRANBERRY PLUM PUDDING WITH
VANILLA SAUCE
 
1 1/2 c. flour
1/2 c. mild molasses (Karo or King syrup)
1/3 c. sugar
2 c. whole raw cranberries
1/4 c. chopped nutmeats
1 1/2 tsp. baking soda
1/3 c. hot water

Vanilla Sauce:

1 c. sugar (scant)
2 tsp. flour
1/2 c. butter, minus 2 tbsp.
1/2 c. milk or light cream
1/4 tsp. vanilla

Combine flour, molasses, cranberries, sugar and nuts in a bowl. Add soda to hot water and add to flour mixture. Mix lightly. Pour into greased 1 quart mold. Cover tightly with foil. Steam over boiling water 1 1/2 hours. Serve warm with Vanilla Sauce. Double recipe for larger mold. Add another hour of steaming.

Bring sauce ingredients, except vanilla to a boil over low heat. Cook 2 to 3 minutes. Add vanilla. Serve hot.
