SUNSHINE CARROTS 
3 lb. carrots, sm. ones or thinly sliced
2 tbsp. brown sugar
2 tsp. cornstarch
1 1/2 tsp. ginger
Salt
3/4 c. orange juice
2 tbsp. butter
Orange slices for garnish

Cook carrots while making the sauce.

SAUCE: In a saucepan mix sugar, cornstarch, ginger, and salt. Stir in orange juice. Cook on medium heat until it thickens; stir constantly. Remove from heat and toss carrots into the sauce. Garnish with orange slices or peel curls. Serves 12.
