VIRGINIA APPLE CAKE | |
1 c. vegetable oil 2 c. sugar 2 eggs 2 1/2 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. baking powder 4 c. cooking apples, chopped 1 c. pecans (optional) 1 (6 oz.) pkg. butterscotch chips 1 tsp. cinnamon In large bowl, mix well oil, sugar and eggs. In separate bowl sift together flour, soda, salt, cinnamon and baking powder. Add the flour mixture to the oil mixture. Stir in the apples and nuts. Mix well by hand. Spread cake into greased 13 x 9 inch pan. Distribute butterscotch chips on top of cake. Bake at 350 degrees for 55 to 60 minutes (or less) until golden brown. Cool and cut into squares. For best results, bake one day before serving. Can be frozen - it keeps well. |
