CHOPPED APPLE CAKE 
4 c. chopped apples
2 c. sugar
1 c. cooking oil
1 tsp. vanilla
2 beaten eggs
1 tsp. salt
2 tbsp. hot water
2 tsp. baking soda
1 1/2 tsp. cinnamon
3 c. flour
1 c. chopped nuts
1 (6 oz.) pkg. butterscotch morsels

Soak apples, oil, sugar and vanilla for 1 hour in large bowl. Stir well to blend. Important: After 1 hour add beaten eggs, salt and soda that has been dissolved in hot water. Add cinnamon and flour; blend well. Add nuts and morsels.

Bake in well greased and floured loaf pan for 40 minutes at 350 degrees. Sprinkle top of warm cake with sifted powdered sugar. Yield: Makes 15 medium pieces.
