LASAGNE ROLL 
1 pkg. (16 oz.) lasagne
1 pkg. (16 oz.) frozen mixed vegetables, defrosted
1 container (3 lbs.) ricotta cheese
1 egg
1 pkg. (16 oz.) Mozzarella cheese, shredded, divided
1/2 c. grated Parmesan cheese
1 jar (32 oz.) spaghetti sauce, divided

Cook pasta following package directions, drain. Place on damp paper towels. In food processor of blender, process vegetables until pureed. Combine with ricotta, egg, 2 cups Mozzarella and Parmesan cheese.

Pour 1 cup spaghetti sauce into 13 x 9 inch baking dish. Spread 3 tablespoons mixture over each pasta strip, roll up strips and add to dish. Top pasta with remaining sauce and Mozzarella. Bake at 350 degrees for 30 minutes. Makes 8 servings.
