STRAWBERRY MERINGUE COOKIES 
4 large egg whites
1 c. sugar
6 drops red food coloring
1/8 tsp. salt
1 tsp. imitation strawberry flavoring

Preheat oven to 200°F. Line 2 baking sheets with parchment paper. Combine egg whites and salt in a large bowl. Beat with an electric mixer on a medium-high speed until soft peaks form, 1 to 2 minutes. Increase speed to high. Add sugar gradually in a slow steady stream, beating until stiff, shiny peaks form, 2 to 4 minutes. Add strawberry flavoring and food coloring; mix until just combined. Spoon meringue mixture into pastry bag fitted with star tip. Pipe meringue into 2-inch mounds on prepared baking sheets.

Bake until cookies are dry and crisp, about 1 hour and 35 minutes. Turn off oven; let cookies stand in oven with door closed for 5 minutes. Remove from oven; cool 3 minutes. Remove from parchment paper; place on wire rack to cool completely.
