HERMAN 
2 c. flour
2 c. warm water
1 pkg. dry yeast

SOUR DOUGH STARTER: Combine ingredients in large bowl (not metal) and mix together well. Let stand uncovered in warm place (80 degrees) for 48 hours. Stir occasionally. The starter is now ready to use or store. To use, store well and save at least 1/2 cup for future use.

HERMAN: Put starter (Herman) in a fairly large covered bowl and keep him in refrigerator. Stir him every day for 10 days. Write down the days so you can remember that on the first and fifth day, you feed Herman 1 cup flour, 1 cup milk, and 1/2 cup sugar. Stir after feeding.

On the tenth day, you are ready to make Herman. You will have enough to make 2 loaves. You will also have 2 cups of starter left over, one to give to a friend and one to start feeding again (call this day one).

In making Herman, mix 2 cups flour, 1 1/2 teaspoons soda, 1/2 teaspoon salt, 3 teaspoons baking powder, 1 1/2 teaspoon cinnamon, 1 cup sugar. Stir in 1 cup nuts, raisins or dates, if desired. Pour into greased loaf pans. Mix half butter, half brown sugar and 1/2 teaspoon cinnamon and sprinkle over top. Bake at 350 degrees for 40-50 minutes. Cool well before removing from pans.

NOTE: Herman is very sensitive, do not make any derogatory remarks in his presence! Remember, you only need to make the starter recipe once. Also, when you give a friend the starter, be sure to give the recipe too!
