RHUBARB UPSIDE DOWN CAKE | |
3-4 c. cut rhubarb 4 c. mini marshmallows 3/4 c. sugar 1/2 c. butter 1 c. sugar 2 eggs, beaten 1 3/4 c. flour 1/4 tsp. salt 3 tsp. baking powder 1/2 c. milk Arrange rhubarb and marshmallows in 11"x9" baking pan. Sprinkle sugar over. Cream butter, 1 cup sugar and beaten eggs. Add flour, salt and baking powder. Alternate dry ingredients with milk. Pour batter over rhubarb. Bake 1 hour at 350 degrees. Cool 5 minutes and invert onto serving dish. |
