PUMPKIN SPICE JACK - O' - LANTERN COOKIES | |
1 pkg. yellow cake mix 2 tsp. pumpkin pie spice 1/4 c. butter, softened 1 egg 1/2 c. quick cooking rolled oats 16 oz. can (2 c.) cooked, mashed pumpkin FROSTING: 3 drops green food coloring 5 drops red food coloring Assorted candies 1 container ready to spread vanilla frosting 5 drops yellow food coloring Heat oven to 350 degrees. Lightly grease cookie sheets. In large bowl, combine all cookie ingredients; stir until well blended. Drop dough by 1/4 cupfuls 3 inches apart onto prepared cookie sheets. Using back of spoon, spread into 3 inch round pumpkin shape with stem. Bake at 350 degrees for 14-20 minutes or until edges are light golden brown. Immediately remove from cookie sheets; cool completely. Makes 19 cookies. In small bowl, place 1/3 of frosting. Add green food coloring; mix well. Spread on stems of cookie pumpkins. To remaining frosting, add red and yellow food coloring; mix well. Spread over pumpkin portion of cookies. Decorate, using assorted candies for mouth, eyes and nose. Use paste food color for more vivid color. Stem does not have to be perfectly shaped as frosting will cover it. |
