PUMPKIN CUSTARD 
1 c. pumpkin
1 egg, beaten
1/2 c. skim milk
3/8 tsp. cinnamon
1/8 tsp. ginger
1/8 tsp. cloves
1/8 tsp. nutmeg
1 1/2 tsp. liquid sugar substitute

Blend together all ingredients. Spray pie pan with nonstick coating spray. Pour pumpkin mixture into pan. Bake at 350 degrees for 50 to 60 minutes or until knife inserted near the edge comes out clean.

Yield: 3 servings. Exchanges: 1/2 meat and 1 vegetable or 1/2 cup skim milk and 1/2 fat. Calories: 66 C P F; 100g = 6-3-1. Low sodium (3 to 4 gm Na) : OK. Low cholesterol: substitute 1/4 cup Eggbeaters for egg.
