IN SHELL PUMPKIN CUSTARD | |
1 pumpkin, 5-7 lbs. 6 whole eggs 2 c. heavy cream or milk 1/2 c. brown sugar 1 tbsp. molasses 1/2 tsp. nutmeg 1 tsp. cinnamon 1/4 tsp. ginger 2 tbsp. butter Cut the lid off pumpkin and scoop out seeds. Mix the remaining ingredients except butter and pour into pumpkin. Top with butter. Place lid back on pumpkin and place in a baking pan. Bake in a 350 degree oven 1 - 1 1/2 hours or until mixture has set like a custard. To serve, remove top and scoop out some of the pumpkin with the custard. Serve with whipped cream if you like. |
