LIME PICKLES | |
2 gal. cucumber 3 c. pickling lime Water 5 lbs. sugar 2 qts. vinegar Keep in refrigerator until processed. Day 1: Slice cucumbers into thin slices in large plastic bowls or gallon jugs. Add 3 cups of lime, cover with water. Let set in refrigerator 24 hours. Day 2: Wash 3 to 4 times until all lime is rinsed off. Cover with water, return to refrigerator for 24 hours. Day 3: Bring vinegar and sugar to a boil. Pour off water and pour vinegar and sugar over cucumbers. Return to refrigerator for 24 hours. Day 4: Boil 1 hour. Pack into clean mason jars and seal. |
