APPLE/CINNAMON MUFFINS 
2 c. Oat Bran cereal
1/4 c. brown sugar
1/2 tsp. cinnamon
1 tbsp. baking powder
1/2 c. skim milk
3/4 c. frozen apple juice concentrate
2 egg whites
1 tbsp. vegetable oil
1 med. apple, chopped
1/4 c. raisins

Preheat oven to 425 degrees. In medium bowl, mix dry ingredients. In large bowl, mix milk, apple juice concentrate, egg whites and oil. Add dry ingredients to large bowl, mixing well. Fold in apples and raisins. Line 12 muffin tins with paper baking cups. Fill cups 2/3 full. Bake 18 minutes. Makes 12 muffins.
