CINNAMON APPLE MUFFINS 
2 c. flour
1/4 c. sugar
1/2 tsp. salt
1/2 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
2 eggs
1 c. buttermilk
1/4 c. oil
3/4 c. finely chopped apples

TOPPING:

2 tbsp. sugar
1/2 tsp. cinnamon

Mix dry ingredients. Beat eggs with milk and oil. Add to dry ingredients. Add chopped apples. Blend just enough to mix. Fill well greased muffin tins two thirds full. Sprinkle small amount of the topping of sugar mixed with cinnamon on toop of each muffin. Bake at 425 degrees for 15 to 20 minutes or until brown. Makes 24 medium size muffins. NOTE: The cinnamon sugar topping makes these muffins brown beautifully.
