OAT-CRANBERRY MUFFINS WITH
CINNAMON CRUST
 
3/4 c. whole wheat flour
3/4 c. all-purpose flour
1/2 c. rolled oats
2 tsp. baking powder
1 tsp. baking soda
1/2 c. brown sugar, firmly packed
1 c. chopped cranberries

Mix all ingredients together, then add cranberries and stir until coated. 1/2 c. butter, melted 1/2 c. buttermilk

Beat all together; pour over above and fold together until just moistened.

TOPPING:

1/4 c. butter, softened
1/4 c. brown sugar, firmly packed
1/4 c. rolled oats
1/4 c. flour
1 tsp. cinnamon

Mix all together, put on top of muffins. Bake 20 minutes at 400 degrees.
