COCONUT POUND CAKE 
2 c. self rising flour
4 eggs
1 c. buttermilk
1 c. corn oil
2 c. sugar
1 c. coconut
1 tsp. vanilla
1 1/2 tsp. coconut flavoring (lemon flavoring can be substituted)

Mix oil, sugar and eggs. Add buttermilk, flour and flavoring. Grease and flour tube pan and put wax paper in bottom. Bake at 325 degrees for about 35 minutes.

ICING:

1 c. granulated sugar
1 tsp. coconut flavoring
1/2 c. water

Boil one minute and pour over hot cake. Let cool in pan.
