SUGARLESS, EGGLESS COOKIES 
1 1/2 c. raisins
1 1/2 c. cut up dates
1 1/2 c. diced fruit (apples, pears, etc.)
3 c. flour
1 tsp. baking soda
1 tsp. cloves
2 c. boiling water
5 tbsp. shortening
1 tsp. salt
1 tsp. vanilla
1 tbsp. apple juice

Put raisins, dates, fruit and shortening in water; simmer 20 minutes. Let cool. Add flour, soda, cloves, salt, vanilla, nuts and juice. Mix well. Drop cookies onto cookie sheet and bake at 325 degrees for 25 minutes.
