CRANBERRY-GLAZED BRIE 
3 c. cranberries
3/4 c. sugar
1 tsp. grated ginger
1/3 c. currants
1/3 c. apple cider
1/8 tsp. allspice
1/8 tsp. clove
Round of brie cheese

Combine all ingredients in heavy non-aluminum saucepan. Cook over medium heat until most of the berries pop, stirring frequently, about 5 minutes.

Using sharp knife, cut circle in top rind of cheese, leaving 1/2 inch in border. Remove center circle of rind from cheese. Place cheese in baking dish or cookie sheet. Spread cranberry mixture over cheese. Bake at 300 degrees for 12 minutes. Cool slightly. Serve with crackers or apple wedges.
