MEAT AND POTATO LOAF 
2 med. potatoes, peeled and cut up
1 tbsp. snipped parsley
1/8 tsp. dried thyme, crushed
1/8 tsp. dried marjoram, crushed
Salt and pepper to taste
1/3 c. tomato sauce
1/4 c. finely chopped onions
1/2 c. crushed saltine crackers
2 beaten eggs
2 tbsp. finely chopped green pepper
3/4 tsp. salt
1 1/2 lbs. ground beef
1/4 c. ketchup
1/4 tsp. dry mustard

Cook potatoes covered in boiling water, salted until tender. Drain reserving liquid. Mash, adding about 3 tbsp. reserved liquid to make stiff consistency. Stir in parsley, thyme and marjoram. Season with salt and pepper. Set aside.

In large bowl, mix eggs, cracker crumbs, tomato sauce, onion, green pepper and 3/4 tsp. salt. Add beef, mix well.

On waxed paper pat beef mixture to a 10x8 inch rectangle. Spoon potato mixture lengthwise down center of beef mixture. Fold sides of beef mixture over potato mixture. Seal.

Place seam side down on 15 x 10 1/2 inch pan. Remove paper. Bake 350 degrees for 45 minutes or done. Heat together ketchup and mustard and spread over meat loaf.
