BUTTERMILK WAFFLES 
2 eggs, separated
1 tbsp. sugar
6 tbsp. butter, melted
2 c. buttermilk
1 3/4 c. all-purpose flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt

In a medium bowl, beat egg yolks, sugar, butter and buttermilk until creamy. Blend flour, baking powder, baking soda and salt; stir into sugar mixture. Beat egg whites until stiff but not dry. Fold beaten egg whites into batter. Preheat a waffle iron. Using 1/2 to 1 cup batter, bake according to manufacturer's directions. Serve with honey butter. Makes 4 to 8 waffles.
