BUTTERSCOTCH PIE 
1 c. brown sugar
4 tbsp. cream
1/4 c. butter
1 c. milk
3 egg yolks (reserve whites)
6 tbsp. flour
9 inch baked pie crust

In skillet combine brown sugar, cream and butter. Stir over low heat until caramelized. Combine milk, egg yolks and flour. Add to skillet mixture then transfer to double boiler and cook until filling will form peaks. Fill baked pie crust. Top with meringue made from egg whites and 1/4 cup sugar. Bake at 350 degrees until golden brown.
