CHOICE SALAD 
1 c. pineapple juice
2 tbsp. cornstarch
1/4 c. sugar
1 beaten egg
1 c. diced pineapple
1/4 c. diced cheese
1/2 c. nuts (chopped), optional
1 c. white miniature marshmallows

In saucepan combine pineapple juice, cornstarch and sugar. Cook until thick, stirring constantly. Cool slightly, then slowly add beaten egg, stirring well. Return to heat and cook 2 minutes longer, continuing to stir. Pour mixture over diced pineapple, cheese, nuts and marshmallows.
