MOUNTIE'S CHOICE 
4 slices Canadian bacon, 1/4 inch thick
4 frozen oat bran waffles, toasted
1 tbsp. butter
2 apples, peeled and chopped (about 2 c.)
1/2 c. raisins
1/4 tsp. cinnamon
4 slices Monterey Jack Cheese (optional)

Place a slice of Canadian bacon on each waffle, set aside. Melt butter in a small saucepan. Add apple, raisins and cinnamon. Cook, covered, on low heat for 5 minutes or until apple is tender. Spoon over waffle. Add cheese slices, if desired, and broil 1 to 2 minutes, watching carefully.
