TURKEY PARMESAN 
1/4 c. all purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. seasoned dry bread crumbs
1/3 c. grated Parmesan cheese
1 egg
2 tbsp. water
6 turkey cutlets
3 tbsp. vegetable oil
1 (14 oz.) jar marinara sauce
1 c. Mozzarella cheese, shredded

On wax paper, mix flour, salt and pepper. On another piece wax paper, mix bread crumbs and Parmesan cheese. In pie plate, beat egg and water. Coat cutlets with flour mixture, egg mixture and lastly crumb mixture. Saute cutlets in skillet in hot oil until browned on both sides. Place in baking dish and spoon marinara sauce over tops. Bake in preheated 400 degree oven for 10 to 15 minutes, sprinkling on the Mozzarella cheese during the last several minutes of baking. Serves 6.
