BLUEBERRY DUMPLINGS | |
2 cups sifted all purpose flour 4 tsp. baking powder 1/2 tsp. salt 2 tbsp. sugar 3 tbsp. cold butter or vegetable shortening 1 cup milk 1/2 tsp. vanilla 1 cup blueberries (or any other fruit) In a large saucepan, bring 2 quarts of water to a boil. Add 2 tablespoons of salt to the water. Sift together flour, salt, sugar and baking powder. Cut butter into chunks and work into flour using a pastry blender or two butter knives until mixture resembles coarse crumbs with pea-sized chunks. Stir in milk, enough to make a stiff dough. Stir in blueberries or fruit. Drop mixture by the tablespoon into rapidly boiling water. Cover and cook for about 12 minutes or until centers are cooked through - larger dumplings will take longer. Remove using a slotted spoon and drain well. Serve with vanilla pudding, ice cream or Cool Whip. Note: If you have a steamer, the dumplings can be prepared in the steamer; this will take 40-50 minutes but the dumplings will plump better. Submitted by: Belle |
