ITALIAN SAUSAGE SOUP 
1 lb. Italian sausage
1 c. chopped onion
1 tsp. garlic powder
1 can beef broth
1 qt. tomato juice
1 qt. whole tomatoes
5 1/2 oz. carrots, sliced
1/2 tsp. basil leaves
1/2 tsp. oregano leaves
1 c. tomato puree
8 oz. tortellini (either cheese or beef)
2 tbsp. & 2 tsp. parsley
1/2 c. chopped green pepper

Brown sausage and drain grease. Add onions and garlic. Cook until onions are tender. Add beef broth, tomato juice and whole tomatoes, carrots, spices and puree.

Heat to boiling and simmer uncovered for 30 minutes. Stir in tortellini, parsley and pepper. Simmer uncovered for 35 to 40 minutes or until tortellini are tender. Serve with Parmesan cheese if desired.
