ITALIAN SAUSAGE SOUP | |
1 lb. Italian sausage, cut in 1/2-inch slices 4 cloves garlic, minced 2 lg. onions, chopped 1 1/2 qt. canned beef broth 1 (16 oz.) can Italian pear tomatoes Parmesan cheese, grated 1 1/2 c. red wine (or water) 1/2 tsp. basil 1/2 tsp. thyme 3 tbsp. parsley, chopped 1 med. green pepper, chopped 2 med. zucchini, sliced 3 c. uncooked Farfalle (bow tie noodles) In a 5-quart kettle, brown sausage on medium heat. Add garlic, onion and cook until limp. Stir in and break up tomatoes. Add broth and wine, basil, thyme and parsley; simmer uncovered for 30 minutes. Add vegetables and noodles; cover and simmer 25 minutes more. Sprinkle each serving with Parmesan cheese. Serves 8-10. |
