GINGER PORK CHOPS 
2 tbsp. oil
4 chops
1 c. applesauce
1/2 c. sherry
1 tsp. tarragon
1 tsp. ginger
8 oz. carrots or mushrooms
1 tbsp. soy sauce

Trim fat. Put oil and chops in skillet. Cook 15 to 20 minutes until brown on both sides. Mix the rest of ingredients and pour over chops. Cook on low 20 minutes or until tender. Turn off heat and let set until serving. May serve with rice, potatoes, or noodles.
