GINGER PORK CHOPS 
6 pork chops, trimmed of fat
1 tbsp. olive oil
2 tbsp. soy sauce
1 1/2 tsp. honey
1 clove minced garlic
1 c. orange juice
1 tbsp. Dijon mustard
1 1/2 tsp. minced ginger root
1 tbsp. cornstarch

Heat oil in skillet and brown chops on both sides. Turn off heat, pour off fat, mix 2/3 cup orange juice, soy sauce, honey, garlic, mustard and ginger. Dump this over chops and let sit 1/2 hour or more, turning once. When ready to finish off, reheat pan and simmer chops, about 15 minutes each side. Mix cornstarch with 1/3 cup orange juice. Remove chops to warm dish. Increase heat and stir in cornstarch mix, stir until thickened. Serve chops and spoon pan sauce over the top.
