SHRIMP SCAMPI 
1 lb. fresh cleaned shrimp
1 tbsp. cooking oil
4 tbsp. parsley flakes
1 c. rice
1 tbsp. lemon juice
1 stick butter
1/4 c. cooking sherry (opt.)
1 tsp. salt
4 sm. cloves garlic

Put oil, butter, garlic, lemon juice and parsley flakes in frying pan and saute. Add cooking sherry and salt, then add shrimp. Cook on medium heat and stir. Lower heat and simmer. Cook rice separately. Serve shrimp and sauce over rice. (Remove garlic.)
