LIVER AND ONIONS 
1 (1 lb.) beef liver
1/4 tsp. pepper
1 1/2 tsp. flour
1 1/2 tsp. vegetable oil
2 med. onions, thinly sliced
1/2 c. beer
1/2 c. hot beef broth
1 tsp. cornstarch

Season liver with pepper and coat with flour. Heat oil in heavy fry pan. Add liver and fry until lightly brown on each side, and add onions and cook 5 minutes, turning once. Pour in beer and broth and cover. Simmer 15 minutes. Remove liver and onions to baking dish. Season sauce in fry pan to taste.

Blend cornstarch with small amount cold water and stir into sauce and cook until thick and bubbling. Then pour over liver and onion mixture. Place in 350 degree oven and bake until liver is tender.
