AUNT BEES EGG SOUFFLE 
10 slices white bread, crust removed
1 lb. grated Cheddar cheese
6 eggs
1/2 tsp. salt
1 qt. milk
1 tsp. dry mustard
1 lb. bacon, cubed & fried crisp

Butter both sides of bread and cube. Put in bottom of 9 x 13 inch glass baking pan. Sprinkle cheese over bread, beat eggs, salt, milk and dry mustard together; pour over cheese and bread. Cover, refrigerate overnight.

Next morning take and sprinkle crisp bacon over top. Let stand 1 hour before baking. Bake at 350 degrees for about 1 hour or until brown and bubbly. Serves 8-10.
