BOILED RICE CHINESE STYLE 
2 c. rice, washed and drained
2 1/2 c. water

1. Add water to rice. Bring to a boil over high heat in an UNCOVERED saucepan.

2. Turn to medium heat. When water has evaporated, turn to low heat. Cover pan with the lid for about 20 minutes.

3. Turn off heat. Let the rice stand for another 10 minutes in the covered saucepan. (Do not open the lid).

4. Before serving, fluff the rice with a pair of chopsticks or a spatula.

SECRETS:

1. Never stir the rice when it is boiling or it will become sticky.

2. After the water has evaporated and the pan has been covered, do not lift the lid for at least 30 minutes to insure that the steam does not escape.
