CHINESE FRIED RICE 
10 slices of bacon
3 tbsp. bacon drippings
1/2 c. chopped onions
1 c. diced celery
1 c. sliced mushrooms
2 1/2 c. cooked rice
2 tbsp. soy sauce
1 egg, slightly beaten

Cook bacon until crisp and put aside. Measure bacon drippings into skillet. Add onion and celery, cook until tender. Add mushrooms, rice, and soy sauce. Cook for 10 minutes over low heat stir occasionally. Stir in beaten egg and cook only until egg sets. Sprinkle with crumbled bacon. Serve with extra soy sauce.
