CHINESE FRIED RICE 
2 tbsp. oil
1 lb. raw med. shrimp, cleaned
1/2 lb. mushrooms, sliced
1 1/3 c. minute rice, uncooked
2 eggs, scrambled into sm. pieces
1 c. ham strips
1 1/2 c. chicken broth
1 c. cooked peas
2 tbsp. chopped scallions
1 tsp. soy sauce

Heat oil in skillet. Add scallions, shrimp, mushrooms and long grain minute rice. Saute until shrimp are pink. Remove from heat, stir in eggs and ham; transfer to a covered serving dish.

In skillet, bring remaining ingredients to a boil, then stir into rice mixture. Cover and let stand for 5 minutes. Stir before serving. 4 servings. Recipe can be doubled.
