CHINESE FRIED RICE 
2 tbsp. oil
1/2 c. finely diced ham, chicken or pork (crisp bacon and ham preferred)
1 qt. cold cooked rice
1 green onion, finely chopped
2 tbsp. soya sauce (optional)
1 or 2 eggs, beaten
3 finely sliced mushrooms

Fry meat lightly in the oil. Add rice, mushrooms, green onion and soy sauce and continue to fry over low heat for 10 minutes. Add eggs and continue to fry and stir another 5 minutes.

(The eggs can be cooked in a frying pan first and then cut into slivers before adding to the rice mixture.)
