ZUCCHINI BREAD | |
3 eggs 2 c. sugar 1 c. salad oil 1 tbsp. vanilla 1 c. quick oatmeal 2 c. flour 1 tbsp. cinnamon 1 tsp. baking soda 1 tsp. salt 1/4 tsp. baking powder 2 c. unpeeled, coarsely grated zucchini 1 c. pecans, chopped Beat together eggs and sugar. Add salad oil and vanilla. Mix together oatmeal, flour, cinnamon, soda, salt, and baking powder. Add to egg and sugar mixture. Add zucchini and pecans. Pour into 2 greased and floured 4x8 inch loaf pans. Bake at 350 degrees for 55 to 60 minutes. Double the recipe and get 5 loaves. |
