CATHY'S ZUCCHINI BREAD 
2 c. zucchini, grated
3 eggs
3/4 c. sugar
3/4 c. brown sugar
2 tsp. vanilla
1 c. oil
2 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/4 tsp. baking powder
1/2-1 c. pecans

Mix eggs, sugars, vanilla and oil. Then add zucchini and nuts. Add dry ingredients together separately, then add to zucchini mixture. Bake in 2 greased loaf pans at 300 degrees for 1-1 1/2 hours.
