ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. vegetable oil
1 c. chopped pecans
1 tbsp. vanilla
1 tsp. salt
2 c. grated zucchini
2 c. flour
1 tbsp. cinnamon
2 tsp. baking soda
1/4 tsp. baking powder

In large bowl, beat eggs until frothy. Beat in sugar, oil and vanilla until thick and light yellow. Stir in zucchini and flour sifted with cinnamon, soda, salt and powder. Fold in nuts.

Pour into 2 greased and floured 8"x4"x3" pans. Bake at 350 degrees for 50 minutes or until done. Let cool in pans 10 minutes. Invert on racks and cool. This isn't just plain old everyday zucchini bread. This is really delicious.
