STRAWBERRY-RHUBARB-ORANGE
OATMEAL BAKE
 
Enjoy this tasty, heart healthy treat!

1/2 cup sugar
1 tsp. cinnamon
2 1/2 cups oatmeal
6 fresh strawberries, chopped small
1/2 stalk rhubarb, chopped small
1/2 cup milk
1 tsp. orange zest
1/2 orange (pulp and juice)

Preheat oven to 350°F.

In a bowl combine sugar, cinnamon and oatmeal. Stir in strawberries, rhubarb and milk. Add orange zest. Mix.

Cut 1 orange in half. Squeeze 1/2 the orange into the bowl for its juice. Then take out its pulp, cut up small (or pull apart with your fingers) and add into mixture. Stir everything together well.

Put into an oven-safe glass bowl and bake (cover with foil and poke a few holes in the top) at 350°F for 30 to 45 minutes or until rhubarb is tender.
