SHRIMP AND OKRA GUMBO 
2 lb. peeled and deveined shrimp
3 qt. water
1 tbsp. tomato paste
2 lb. fresh okra, cut sm.
1 c. chopped onion, cut fine
1/2 c. celery, chopped fine
1/2 c. bell pepper
1 fresh tomato, chopped
4 cloves garlic, chopped
Salt and pepper to taste
1/2 c. oil

Season shrimp and set aside. Smother okra in oil for 35 minutes, then add tomato, onion, garlic, celery, and bell pepper. Cook for about 30 minutes. Add 3 quarts water and season to taste. Cook for 45 minutes to an hour. Then add shrimp. Cook another 20 minutes. Add green onion tops and parsley 5 minutes before serving. Serve over cooked rice.
