SICILIAN MEAT ROLL 
2 beaten eggs
3/4 c. soft bread crumbs
1/2 c. tomato juice
2 tbsp. parsley
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. pepper
1 sm. clove garlic
2 lbs. lean ground beef
8 thin slices boned ham
6 oz. shredded mozzarella cheese (cut 3 slices of cheese in half)

Combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper and garlic. Stir in ground beef. Mix well. On foil or waxed paper pat meat into a 12 x 10 inch rectangle. Arrange ham slices atop meat leaving small margins around edges. Sprinkle shredded cheese over ham. Starting from short edge, carefully roll up meat using the foil or waxed paper to lift; seal the edges and ends. Place roll, seam side down in a baking pan. Bake in 350 degree oven for 1 hour and 15 minutes or until done. Place cheese slices on top of meat roll; return to oven and bake 5 minutes or until cheese melts.
