English muffins (split in half)
shredded Mozzarella cheese
sliced tomatoes
olive or vegetable oil
salt and pepper
garlic powder
oregano
hot pepper flakes (optional)
grated Parmesan cheese (optional)

Preheat oven to 425°F.

Lightly toast muffins. Put Mozzarella cheese on each half muffin. Put tomato slices on top of cheese. Lightly sprinkle oil on tomatoes. Season with desired amount of spices. Top with more Mozzarella.

Place muffins on baking sheet and bake at 425°F for about 15 minutes or until cheese browns.
