OPEN-FACED SHRIMP ON ENGLISH
MUFFINS
 
3 slices bacon, cooked crisp, crumbled
1 stalk celery, finely diced
1/3 c. finely diced green pepper
3 green onions, finely diced
1 (4 oz.) can shrimp, well drained
1 c. mayonnaise
1 c. grated sharp cheddar cheese
1 pkg. of 6 English muffins

Mix bacon, celery, green pepper, green onion, shrimp, mayonnaise and cheese. Spread on English muffin halves. Broil about 5 minutes or until bubbly, be sure not to burn. Cut muffin halves into four pieces. Serve hot.

My mother has been making this recipe since I was a child, approx. 50 years. I add more cheese and use frozen shrimp now but it is a favorite wherever I make it. We call them "shrimpies". I never make it without double or tripling the recipe, they are that good!
