WELBY INN FRENCH TOAST 
1 loaf French bread, sliced thick

EGG MIXTURE:

8 eggs (or equiv. Egg Beaters)
1 tsp. vanilla
3 c. milk
4 tsp. sugar

CHEESE MIXTURE:

6 oz. soft cream cheese
1 tsp. vanilla
1 to 2 tbsp. apricot preserves
1/2 c. confectioners' sugar
1 tbsp. rum

Butter bottom of bread slices, place in 9 x 13 inch pan. Cut out circle in each bread slice, spoon in dollop of cheese mixture.

Pour egg mixture over bread slices and refrigerate overnight. Bake at 350 degrees for 45 minutes. Makes 8 to 10 servings.
