SWEET POTATO CASSEROLE 
2 c. mashed sweet potatoes, cooked
2 ripe bananas, mashed
1 c. angel flake coconut
2 tbsp. lemon juice
1/2 c. sugar
1 stick butter, melted

Mix all together, spray casserole with Pam and pour in mixture.

TOPPING:

1 c. crushed cornflakes
1/2 c. brown sugar
2 tbsp. butter, melted

Mix and top mixture. Bake at 325 degrees for 30 minutes. NOTE: Add maraschino cherries for a festive holiday dish.
