SWEET POTATO CASSEROLE | |
3 cup mashed sweet potatoes 6 tbsp. (3/4 stick) butter 1 cup cream (evaporated milk will do) 1 1/2 cups sugar 2 eggs 1/2 tsp. vanilla 1/2 tsp. nutmeg 1/2 tsp. cinnamon Beat eggs in a separate bowl. Combine above ingredients. Add to beaten eggs. Place in casserole dish and bake at 425°F for 15 minutes. TOPPING: 1/2 cup crushed cornflakes 1/2 cup chopped pecans 1/2 cup brown sugar 6 tbsp. (3/4 stick) butter Mix well and pour on top of potato mixture. Bake 15 minutes more. |
