“SWEET POTATO CASSEROLE” IS IN:
NEXT RECIPE:  TAMALE PIE CASSEROLE

SWEET POTATO CASSEROLE 
3 cup mashed sweet potatoes
6 tbsp. (3/4 stick) butter
1 cup cream (evaporated milk will do)
1 1/2 cups sugar
2 eggs
1/2 tsp. vanilla
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Beat eggs in a separate bowl. Combine above ingredients. Add to beaten eggs. Place in casserole dish and bake at 425°F for 15 minutes.

TOPPING:

1/2 cup crushed cornflakes
1/2 cup chopped pecans
1/2 cup brown sugar
6 tbsp. (3/4 stick) butter

Mix well and pour on top of potato mixture. Bake 15 minutes more.

This is now a family favorite that I make every Thanksgiving. It is great exactly as it is and also good with a half cup crushed pinapple in the potato mixture.

Great recipe! My husband thought these were the best sweet potatoes he had ever had. I did use fresh sweet potatoes and doubled the cornflakes.

Use this recipe any time I make sweet potato casserole, and it is great. I like to use more cornflakes instead of adding nuts :)
